Ingredients
- 1 rabbit
- 1 onion
- 1 leek
- 4 garlic
- 1 green pepper
- 8 mushrooms
- Garlic and paprika seasoning
- 1 bay leaf
- 1 branch of parsley
- Water
- Black pepper
- Chopped parsley
- Olive oil
- Salt
Preparation
In a saucepan with oil, add the onion, the leek and the pepper, all well chopped, salted and add three cloves of garlic broken in half (unpeeled) and a bay leaf.
Let it sauté a little and add the rabbit cut into quarters with salt and pepper. After about 10 min, add the chopped mushrooms and continue sautéing everything. Cover it with water and let it boil for fifteen more minutes.
Finally, sauté the chopped liver in a pan with a little oil, put it in the mortar with a clove of peeled garlic and parsley.
Crush everything well and add it to the stew leaving it cooking for twenty-five minutes over low heat. And finally we season it with garlic and paprika seasoning and serve it very hot.
