- 225 g of chickpeas
- 1 piece of onion
- 2 cloves of garlic
- 1 teaspoon of cumin
- 2 teaspoons of chopped fresh parsley
- 4 tablespoons of flour
- Salt
- Frying oil
Mix in a blender the first 5 ingredients to get a dough, not a puree. Put it in a bowl and add the flour (mix by hand). The texture should be like a bread dough. Let it settle for at least 30 minutes, up to 2 hours.
Put a pan to heat and add the oil. Form 2 cm balls (if the mixture is not held together, add a little more flour to the dough). It is easier to handle the dough with slightly wet hands.
When the oil is at 180°C, fry the balls for 2-3 minutes until they are brown. Once brown, we will leave them in a kitchen paper to extract the extra oil. Finally we will serve hot.
We will serve it with a plate of pita bread, salad greens (lettuce, tomato, onion, cucumber), and hummus sauce or even a spicy sauce. We could add a little cayenne pepper before beating the mixture to give a spicy touch.
