Wild style roast chicken

Ingredients
  • 1 whole chicken
  • Sweet paprika
  • Ground garlic
  • Nutmeg
  • 1 onion
  • Herbs and wild berries seasoning
  • 1 teaspoon of ground black pepper
  • Olive oil
  • Salt
Preparation

Spread the chicken with olive oil and sprinkle it with the herbs and wild berries seasoning. Put it in a baking tray.

In a separate pan, mix the ground garlic, the sweet paprika and the nutmeg. Once the mixture is made, introduce a spoonful of it inside the chicken together with the onion cut into 4 pieces. Sprinkle the rest of the mixture over the chicken. Once seasoned, cover the chicken tray with aluminum foil and bake it at 200ºC for one hour. Once this time has passed, remove the aluminum foil and continue baking the chicken for 20 to 30 minutes more. Once in a while, with a spoon, we will wet the chicken with the juice that is releasing.

Once baked, remove it from the oven and let it rest for 5 minutes before cutting it. While we let the chicken rest, put the remaining juice from the oven tray in a bowl. Serve the chicken with the sauce and accompanied by a light salad.
