Ingredients
- 1 quiche dough
- 3 courgettes
- 3 scallions
- 100 g of grated parmesan
- 100 g of pine nuts
- 20 g of fresh basil
- 2 tablespoons of bread crumb
- Olive oil
- A pinch of salt
Preparation
Extend the dough in a cake mold and poke the bottom several times with a fork.
Cook the dough in the oven, previously heated to 200 ºC of temperature, for 10 minutes. Cut the zucchini and the scallions into thin slices and sauté them in oil, over a low heat, until they start to brown. Season with salt.
Crush the pine nuts with the grated cheese, the chopped basil, the crumb of bread and a little oil. Fill the bottom of the cake with the cooked vegetables and cover them with the previous preparation. Cook the quiche in the oven previously heated to 200 ºC for 15 minutes and gratin for 5 minutes more.
